Food preservation aims to extend the shelf life of foods. The workshop explains the factors which influence the food spoilage and summarize the principles of food preservation.
The lectures will cover following topics:

Mechanisms of spoilage of food products

Prevention and protection against deterioration
Principles of preservation methods
